Pinterest Finds! -- Lasagna Cups

I saw these on Pinterest and they looked awesome so the hubby and I took a shot at it! We tweaked things a little bit but you can see my inspiration here at Lauren's Latest blog.

I wanted to make it a little easier (and less of a grocery list) so instead of making my own meat sauce I decided to just get a jar of Prego Three Cheese Sauce and 1lb of hamburger meat and whip that up in a skillet first.
So here is what you will need....

1 Jar Prego Three Cheese Pasta Sauce
1 pound hamburger meat
1 10 oz. tub Philadelphia Italian Herb & Cheese Cooking Cream
1/3 cup grated parmesan cheese
1/2 cup mozzarella cheese
1/2 cup ricotta cheese
1/2 teaspoon pepper
1 egg
1/2 cup cheddar cheese
1 box of lasagna noodles

Directions:
Preheat the oven to 350 degrees.

 Cook pasta sheets 2 minutes less than package directions and drain. Remove from water and let them cool slightly (using a strainer or baking sheet to dry) until needed.

Prepare meat sauce by cooking hamburger meat until browned. Add pasta sauce and simmer until needed.

Combine Philadelphia cooking cream, parmesan cheese, ricotta cheese, pepper and egg in a mixing bowl until well blended.

Take your cupcake pan and lightly grease (you can also use parchment paper, I didn't have any and the spray worked just fine for me).

Place a full size noodle into the each cup twirling it around so that it fits well into the hole.


Then I took the remaining noodles and cut them into small pieces that are big enough to fit into the bottom of the cup (you will need some of these slices for layering). This part was easier when the noodles had cooled off a little and stuck to each other better.

Now you can add the layers. Start with a spoon full of meat sauce. Next add a spoon full of cheese. Then add a noodle piece. Press lightly to make sure layers are filling out the cup well.



Repeat this step until the cups are filled to the brim (remember that any part of the noodle that doesn't have something in it will become harder in the oven). 

Top with cheddar cheese.


Bake for 25 minutes or until bubbling.



These were so good. Probably the best lasagna ever! So the fact that I made these (with the help of my wonderful husband) was a big accomplishment and success!
